Goat cheese and veggie quesadilla

Melt pat of butter in frying pan on medium heat. Add about one cup spinach, cook down (2-3 minutes)

Move spinach to the side of the pan. Heat up one side of a corn tortilla, then flip it over.

Sprinkle grated cheddar cheese and goat cheese crumbles on the warmed tortilla. As the cheese melts, layer 1/4 cup of pico de gallo salsa over it. Layer wilted spinach over that, and add top tortilla. Flip the whole thing over and let cook for 2-3 more minutes. Slice in quarters and eat!
